The tree, the weather, the care and the oil. Why is our oil so special.
We grow our organic olives from the famous Koroneiki tree. This tree is famous for it's qualities and produces the best olives. The tree is used throughout the whole of Greece but finds it's origin in the Koroni area.
The small olive isn't easy to cultivate but has a high yield of olive oil (27%) of exceptional quality. The tree, of which some of them, are more then a hundred years old, are situated in the best ecological system. The warm western wind takes care of the natural way to remove mildew. The local eco-system provides a natural food for the trees. On average the oil from the Koroneiki tree has an acidity of only 0,4%.
The olives are handpicked during the wintertime (nov - jan) and are processed within 48 hours to ensure maximum quality. After the pressing process the oil matures for another 8 - 10 weeks.
Our trees and skills come from father to son. In this tradition we will pass our knowledge and love for the tree to the next generation, so we continue the legacy of the famous tree and it's precious oil.
